    Summary Chinese fast food industry has a comparatively short history. When KFC Fast Food Chain Restaurant entered Chinese Market in April 1987, the development of Chinese modern fast food is hereby initiated. In 1990s, when GNP has increased by 78%, Chinese fast food industry has obtains an annual increase rate as high as 20%, and also acquired a proportion of profit between 10% and 20%. Fast food industry has become an important power supporting for the sustainable development of catering industry and a new point for economic growth. By the end of 1996, there are about 800 professional fast food enterprises all over the country, with more than 4000 chain operation enterprises, and nearly 400 thousand fast food restaurants. The annual revenue of fast food industry has reached to RMB40 billion, accounting for one-fifth of the revenue of catering industry. In 1999, there are more than 800 thousand fast food enterprises and restaurants with a revenue of RMB75 billion, accounting for one third or the revenue for entire catering industry, which has increased by more than 20% comparing with the amount of last year, 7% higher than the increase rate of catering industry. But there are also discrepancies between the development of Chinese fast food industry with social demands, mainly lying on slow development of types of Chinese fast food, backward production technology, low degree of industrialization and organization, etc. Since fast food is closely related with the rapid economic growth, Chinese fast food industry will be bound to demonstrate a broad market prospect and great market potential with the rapid development of Chinese Economy.
